Health Food - Schmealth Food

Can Health Food Really Be Yummy???

So, for the past month or so, our family has been trying to loose weight. Obviously, I have weight to loose. I gained thirty-three pounds during pregnancy, and I have lost about twenty-three of those pounds so far. Only about ten more to go! And we go to the beach in two weeks!!!

So, we got a gym membership and are eating right…with the exception of cheat day (Saturday). Our version of healthy is no sugar, limited wheat, and lots of fruits, veggies, and protein.

Here are a couple of my favorite meals!

 

Tilapia

We love tilapia! We eat it about once a week at least! We’ve been grilling most of our meat, including the tilapia.

Thaw your fish (Assuming you’re using frozen fish)
Put all the fish in a baggie to marinate
Pour olive oil (enough to cover all the fish), lemon juice, and Tony Chachere’s seasoning. That’s all.
Leave it marinating for a couple of hours in the fridge.

To cook the fish, we cover the grill with foil, then spray the foil with PAM. I am totally in love with Olive Oil Pam! So easy!!! Cook until the fish is flaky and non-translucent.

The topping is a mango salsa.
       -Mango
       - Red Bell Peppers
       - JalapeƱo Pepper
       - Onion

We also have:
           quinoa, basil, cucumber salad
           grilled zucchini and squash
          steamed green beans with lemons

Such a pretty coloring on the plate, and yes, so yummy!!!


 

Stuffed Bell peppers

This recipe is oh, so easy and healthy! I’m sure you’ve seen a version of this on pinterest, but it’s worth posting again.

This one is stuffed with
       Ground beef
       Black Beans
       Corn
       Quinoa
       Rotel

First, brown the ground meat (or chicken would be good, too!) and fix the quinoa according to the box. DSCF0965


Then, mix the cooked meat, corn, beans, quinoa, and rotel.

Cut off the top of the peppers.  - this way, the seeds come right out with the top.

Put them on a cookie sheet or a pan

Then, pour the mixture into the peppers.

Top with cheese.

Put into the oven…I did 375 for 15-20 min…until the cheese melts and the pepper is a little soft.

These are just two recipes that I cook all the time…So easy…So healthy!
